These buttery cookies, rolled in cashew nuts are quick and delicious.

Makes 15
100 gm plain flour (maida)
2 to 3 tbsp finely chopped cashew nuts
75 gm butter or margarine – softened
50 gm powdered sugar
2 to 3 drops almond essence or 1 tsp vanilla essence

Sieve the flour.

Preheat oven at 200°C/400°F

Beat butter & sugar very well until light & creamy.

Add the essence and beat again.

Add the flour and mix gently to form a soft dough.

Form into small balls and roll into the chopped cashew nuts. Flatten slightly.

Arrange on a greased tray, keeping 1” apart.

Bake in a preheated oven for 15 to 20 minutes.

Remove from the tray when slightly cold.
